Healthy Smoothie Recipes & Downright Delicious Salads!

I had the opportunity to take a much needed “mom’s day” while visiting family in Toronto. One of the highlights of my day was a nourishing lunch at the award winning Fresh Restaurant. They have done a tremendous job of creating contemporary vegetarian and vegan recipes that are as much a delight to the eyes as they are to the taste buds.

This was especially exciting to me because a couple of years ago we received the first two Fresh Restaurant recipe books: Juice For Life and Fresh At Home as a gift. After two years of recreating the recipes, I was happy to finally dine in.

I also managed to crab a copy of their latest book release Refresh. In addition to great recipes like Sweet Potato Wontons, Morgan’s Samosas, Nepalese Dal (one of my favorites!), Butternut Squash and Pear Soup, Chocolate Brownie Cookies and some of the most amazing salads on the planet, it also contains about 70 pages of deliciously healthy smoothie recipes, juicing tips, juice machine recommendations and info about juice cleansing.

The recipes are separated into “Energy Elixirs”, “Immune Elixirs” including 3 hot drinks, “Wheatgrass Elixirs”, “Super Power Shakes”, “Espresso Shakes” (eat your heart out Starbucks!), “Fresh Fruit Smoothies” and “Vegetable Cocktails”. Yum Yum!

Vegan or not – Grab yourself a copy of Refresh. It’s a delicious option for healthy families looking to add some meat free options to mealtime.

In the meantime, try this healthy smoothie recipe from Refresh (the kids will love it!)

Dragonfly Smoothie – Simple, sweet and a pretty pink color.

4 red apples

2 tbsp raspberries (fresh or frozen)

1 Banana (peeled)

Juice apples first, then place in blender with raspberries and banana. Start on low setting and then switch to high setting for about a minute.

Easy refreshment? Take off your shoes after a long day at the office. Walking around barefoot, especially in soft grass, really eases the day’s stress.
